Tortilla-less Vegetable Enchilda

-2 Cups Kale
-1/4 C Green Enchilda Sauce
-1 C Peppers, diced
-1/4 C Taco Cheese
-1/4 C Corn
-1/4 Rice, cooked
-Hot sauce and sour cream per preference.

-Put kale in food processor.
-Dice peppers.
-Add in corn and rice.
-Top with enchilada sauce and cheese.
-Put in microwave for 1-2 minutes to melt cheese. Add hot sauce as desired.
