Salad Ingredients:
- 1/2 Sweet Potato - 1/4 C Salsa - 1/2 Bell Pepper, diced - 1/3 C Black Beans, rinsed - 2 TBS Greek Yogurt - 1/4 Avocado - 1 Egg
Directions: - Wash sweet potato and then cut in half. Cut slits into the potato and place in the microwave for 5 minutes. Cook times may vary, check your microwave. Check for a complete cook by pushing a fork through the potato. When it slides in easily through the thickest part of the potato it is done. - Dice pepper. Rinse pepper and beans. - Cut avocado. - Fry the egg. - Combine all ingredients and enjoy.
- Add hot sauce or cilantro to flavor.
